Earl Grey Cupcakes

Stress baked today and made these really plain but yummy cupcakes

Earl Grey Cupcakes (makes 12)
Recipe adapted from: 
  • 1/2 cup whole milk
  • Splash of vanilla
  • 2 bags Earl Grey tea
  • 1 1/2 cups plain flour
  • 1 1/2 teaspoons baking powder
  • Pinch of salt
  • 100 unsalted butter, at room temperature
  • 150 caster sugar
  • 2 large eggs, at room temperature
  1. Heat milk and vanilla in a saucepan till it simmers
  2. Remove milk from heat, and add tea bags
  3. Steep for 20 minutes in the covered saucepan
  4. Remove tea bags and squeeze to get as much liquid back in the milk
  5. Cool to room temperature
  6. Bowl 1: Whisk flour, baking powder, salt
  7. Bowl 2: Cream butter and sugar till light and fluffy, add egg yolks and beat till combined
  8. Pour in flour mixture in 3 additions, alternating with tea milk, starting and ending with flour
  9. Beat egg whites till stiff peaks and fold into the batter 1/3 at a time
  10. Bake for 15-20 minutes at 176c or till a skewer inserted comes out clean
